Paté gustoso - WHB 176

Pâté is a spreadable mixture, fat and seasonings, often served with toasts as a starter.
The most famous and probably excellent is foie gras, made from the fattened livers of geese.
This recipe is quite unusual, as the major ingredient has nothing to do with traditional ones. But don't worry, it is very good and I bet no one of your guest will never guess what's hidden inside!

Savory Pa

a can of borlotti beans
70gr. speck or bacon
80gr. soft butter
some rosemary
1 clove of garlic
50gr. brandy
salt/pepper

Pour 20g.butter in a pan with rosemary, garlic and bacon and let fry for a few minutes. Add drained beans, let amalgamate a few seconds, add brandy and let it evaporate at medium fire for a few minutes. Add salt and pepper.
Pour everything in a food processor, add remaining butter and mix until smooth and creamy.

In Thermomix: 20g. butter, some rosemary, garlic and bacon in the bowl: 3 min. 70° speed 3. Add drained beans, brandy, a pinch of salt and pepper: 5 min. 70° speed 3.
Add remaining butter: 30 sec. speed 4, then 1 min. speed 7.

Pour paté in a mold and leave to fix in the fridge about 2 hours.
Perfect on toasts, crackers, or grissini.
