Vellutata di piselli e menta - MLLA 23

MLLA (My legume Love Affair) di Susan è un appuntamento mensile che raccoglie idee e ricette nuove a base di legumi. Questo mese è propiro lei in persona, la fondatrice, ad ospitarci nella sua cucina. E cosa ancora più gradita, metterà in palio ben due libri tra le partecipanti:
Miss Masala - Real Indian Cooking for Busy Living e Quick Indian Cooking. Non sarebbe bello poterne vincere uno? ... ultimamente mi sto dando golosamente alla cucina indiana ... sì, lo so, sono in ritardo tremendo, ma tra poco sarò tranquilla al mare e allora potrò postare la cena indiana che abbiamo organizzato tra amiche ... vestiti compresi!

Questa di oggi è una ricettina semplice (dalla rivista "A Tavola") ma molto rinfrescante, allegra e festosa nel suo bel verde acceso, che potrà essere gustata sia calda che fredda, e che io vedo bene anche in monoporzione per languide cene estive tra amici al calar della sera ... e perchè no, anche per gli indiavolati che se ne staranno ore davanti alla TV a seguire i mondiali di calcio ... tra una patatina e l'altra un sorso di vellutata rinfrescante ci sta bene!

Per 4 persone:

400 g di piselli surgelati
200 g di brodo vegetale o di pollo (oppure fatto con dado casalingo)
1 cucchiaio di cipollotto fresco tritato
foglie di menta
1 yogurt magro, 125 g.
150 g di latte
sale/pepe
un paio di cucchiai di mascarpone o panna acida
(io preferisco quest'ultima)

- Cuocere i piselli nel brodo per circa mezzora o finchè teneri.
- Con un frullatore a immersione, ridurre a purea aggiungendo anche lo yogurt, il latte, qualche fogliolina di menta e il cipollotto tritato. Salare e pepare.
- Versare nelle coppette e decorare con un cucchiaino di mascarpone o panna acida e un ciuffettino di menta.

Mint and Peas Velouté

MLLA (My Legume Love Affair) by Susan is a monthly event that collects ideas and new recipes based on legumes. This month Susan, the founder, will host the event in her kitchen. And more, she will be raffling two books among the participants: Miss Masala - Real Indian Cooking for Busy Living and Quick Indian Cooking.
Wouldn't it be nice (and real luck!) to win one? ... I am very fond of Indian cuisine ... and I know I'm terribly late in posting, but soon I will blog about the lovely Indian dinner we dear friends had together last month ... typical dresses included!
Today's recipe is very simple but very refreshing, cheerful and joyful in its beautiful bright green, to enjoy both warm and cold. I suppose it goes very well served in mini single-portion in a buffet or in relaxing summer dinners with friends ... and why not, for the biggest football fans that will stay hours watching TV to follow the World Cup ... not only chips and fries ... but a smooth refreshing sip of this velouté will be ok!

Serving 4:

400 g frozen peas
200 g of vegetable or chicken broth (homemade or made with nut)
1 tablespoon chopped spring onion
mint leaves
1 low-fat yogurt, 125 grams
150 g milk
salt/pepper
a couple of tablespoons of mascarpone cheese or sour cream
(I prefer sour cream)

- Cook the peas in the broth for about half an hour or until tender.
- With a hand blender, mix peas with yogurt, milk, a few mint leaves and chopped spring onion. Season with salt and pepper.
- Pour into bowls and garnish with a spoonful of mascarpone cheese or sour cream and a mint leaf.
